My mom's favorite crock pot recipe (I didn't post this in my own thread xd ) is pretty hearty. My dad loves it. It's also really simple.
All you need is a box of Zattarain's rice, whatever type you like (I usually use black beans and rice) and cooked meat, again, whatever you want. My mom usually uses beef, I usually use chicken. Dump the Zattarain's in the pot, add whatever else the box tells you to for preparing it (I think it's just a little oil or butter...). Add AT LEAST the amount of water that the box calls for, but I usually add another 1/4 cup or so. Throw the cooked meat in on top. Stir it a few times, put the lid on, let it cook all day. The rice already has spices and seasonings in it, so it's really yummy. It's one of my favorite cold-weather warm-you-up-from-the-inside meals. I usually throw a bunch of cheese on it when I eat it, but I throw cheese on almost everything. smile
