You have to watch them constantly or they go to mush.

It's like, when you buy them rock hard and you leave them to ripen.

Then it's like they go "Wait, wait, don't ripen yet, they haven't left the room... okay they're gone! Go! Go! Go!"

Then you come back to eat them and it's like they turn to mush in your hands.
