Ugh... I'm looking at the upcoming for Manga for 2011. Guess what I see?
Shounen ai, main girl character that meets a strong guy character, shounen ai again, another one with a main girl that's probably ditzy and all crushy on a guy, something involving demons, guy at school with girls... argh! So much of it is the same crap! There's only a couple things that stand out and are different in a way that is interesting!
There's actually a manga that will come out about wine tasting! Can anyone guess the over all plot? Oh, guy doesn't want to be like his father. Surprise! His dad had another son who's a great wine taster! Another surprise! The will says whoever tastes certain wine from around the world correctly will win his vast fortune!
But how can the one son possibly compete with the wine champion? Actually it seems he inherited his talent from his father and is a champion natural! What a twist!
But wait! Something is missing from this, something no young man traveling the world can be without. A girl in the profession of wine and wants to travel with him! Anyone wanna bet they're going to hook up?
Argh! evil evil evil evil evil

You're getting upset over a basic formula for manga. If you want things that'll be different, you need to look at the seinen stuff.
Shounen ai follows that pattern for plots because, it's worked time and again, and can produce relatively popular series. Now, there are some popular shounen manga where you won't get that, but that's because they're of a more mainstream set up.

Heck if I know, all I know is that I'm really looking forward to when I can get my hands on Kohta Hirano's (creator of Hellsing) new manga.
I'm also into Durarara now that I can watch it on TV for free. I'm a year late but ah well. XP
Dis: I know, right!?

Kohta Hirano's a good one, but Hellsing was also seinen. You have to go for the more mature manga if you want s**t that'll be interesting. In fact, you should look up Aphorism. Real interesting s**t.
I just saw Durarara! for the first time last night, and it totally gives me a Boogie Pop Phantom feel.

*pouts* I liked Hellsing. And I thought seinen was mature manga? That focused more on plot and realism?
Nice, huh? I watched the first episode the other week and it was awesome!
*edit* Also, Aphorism sounds like that one Japanese book/movie. You know, where the kids have to wear the collars and fight each other to the death until one wins?
