James Spader is my favorite actor. He's gorgeous, has a creepy serial killer stare, and can act in any genre. Proof: NC-17 movie called Crash from 1996 and Shorts a PG family movie from 2009.

As for actresses, I guess I'd say Kate Winslet because of Eternal Sunshine of the Spotless Mind especially. I also like Mandy Moore in some movies. Melanie Lynskey and Anna Faris are some other favorites of mine.
