I somehow got into baking. It might have been caused from baking with my grandmother when I was younger. Anyways....
I haven't found any recipes for cakes that I would like to try, so I've been using box mix. Not to mention I don't have a lot of free time. But I still would like to try to make at least one cake from scratch. So, could someone give me a good recipe that is good for a beginner for me that doesn't take a lot of time? Baking time can be considered as downtime and will allow me to do other stuff I need to do. Preferably the recipe needs to be something I can make cupcakes with. That way I can take some with me to share with my friends easily.
What I normally make with the box mix is yellow, carrot, and red velvet.
Thanks girls!

Ghirardelli Classic Chocolate Brownies No words can describe this recipe...
Ingredients 1/2 cup Ghirardelli Semi-Sweet Chocolate Chips* 4 ounces Ghirardelli Semi-Sweet Chocolate Baking Bar* 1/2 cup (1 stick) unsalted butter, cut into pieces 1 cup firmly packed light or dark brown sugar 1 teaspoon pure vanilla extract 2 large eggs 3/4 cup plus 2 tablespoons all-purpose flour 1/4 teaspoon baking powder 3/8 teaspoon salt
Method
Preheat the oven to 350°F. Butter and flour an 8-inch square baking pan. Chop the 4 ounces of semi sweet chocolate bars into 1" pieces. In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 4 chopped chocolate and butter, stirring occasionally until smooth. Remove the pan from the heat and let cool to room temperature. Stir the brown sugar and vanilla into the chocolate mixture. Add the eggs and mix well. In a bowl, sift together flour, baking powder, and salt. Slowly fold the flour mixture into the chocolate mixture, mixing well until blended. Stir in the chocolate chips and pour the batter into the prepared pan.
Bake for 25 to 30 minutes, until a tester comes out clean.
Remove from the oven and cool for at least 10 minutes before cutting into 2-inch squares.
* You can find Ghirardelli products in your local Fry's or Walmart, if you're in the US
Carrot Cake This is an old recipe from my mom's Better Homes & Gardens cookbook. By far the best carrot cake ever!

Method
Grease and lightly flour two 9x1-1/2-inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside.
In a large mixing bowl combine flour, sugar, baking powder, baking soda, and cinnamon. Add carrots, oil, and eggs. Beat with an electric mixer till combined. Pour batter into the prepared pan(s).
Bake in a 350 degree F oven for 30 to 35 minutes for round pans or 35 to 40 minutes for 13x9-inch pan or until a wooden toothpick comes out clean. Cool layer cakes on wire racks for 10 minutes. Remove from pans. Cool thoroughly on wire racks. Or, place 13x9-inch cake in pan on a wire rack; cool thoroughly. Frost with Cream Cheese Frosting. Cover and store in refrigerator. Makes 12 to 16 servings.
Grand Fudge Cake This chocolate cake is sooooo delicious!

Alternately add flour mixture and milk (starting and ending with the flour mixture), while mixing on low speed. Continue to mix until smooth. Pour into prepared pans. Bake for 30 to 35 minutes or until a cake tester inserted in the center of cake comes out clean.
If you ever want to venture into the tart/pie world, this basic crust recipe is A MUST:
Martha Stewart's Pate Brisee -- Basic Pie Crust
Ingredients 2 1/2 cups all-purpose flour 1 teaspoon salt 1 teaspoon granulated sugar 1 cup cold unsalted butter, cut into small pieces 1/4-1/2 cup ice water
Method
Secrets to a good pie crust: chilled ingredients and chilled dough. Margarine or shortening can be used instead of butter (but butter is the BEST option).
Put flour, salt and sugar in a bowl, blender or food processor. Add the pieces of butter and process approximately 10 seconds or until it resembles "coarse meal.".
Add ice water drop by drop while machine is running (or you are mixing)--- just until dough holds together without being wet or sticky. Do not mix longer than 30 seconds.
Roll dough out on a piece of plastic wrap. Press down slightly. Chill for at least one hour.

I have this awesome one that i use, it doesnt use eggs or milk, and yet still makes great cake!
Ingredients: 1 1/2 cups flour, 1 cup white sugar, 1 teaspoon baking soda, 1/3 cup unsweetened cocoa powder, 1 cup water, 1/3 cup veggie oil (i use a bit less so it rises better) 1 tablespoon vinegar, 1 teaspoon vanilla.
Instructions:
preheat oven to 350 degrees F and grease whatever size pan, just make sure its not super huge. in a big bowl, mix together the dry until they are well mixed, make three wells in the dry ingredients, and add the vinegar, oil, and vanilla. then pour the water over them and mix until totally smooth. bake for about 25-30 mins, or until a toothpick/cake poker comes out of it clean. if you wanna decorate, cool it completely!
