The perfect camera for a parent?

I want to buy a camera for a friend of mine for Christmas. She has two kids, rapidly growing, and I know she's going to want to capture special moments in their lives. I always see her buying one of those one time use cameras at the drug stores every time some special occasion arises.

So my question is, what would be a good camera for a parent? One that captures pictures and maybe videos, as well and of course, good quality.

A point and shoot.
She is going to want something that has easy settings and is fast to work with.
Like the Canon point and shoots w/ HD video.
