it's really simple and quick to make and great at parties or just a snack:

2 packages (6 oz each) cherry or raspberry jell-o
2- ½ c. boiling water
1 c. cold milk
1 package (3.4 oz) instant vanilla pudding mix

In a bowl, dissolve jell-o in water; set aside for 30 minutes. In a small bowl, whisk milk and pudding mix until smooth, about 1 minute. Quickly pour into jell-o; whisk until well blended. Pour into an oiled 13x9x2 inch dish. Chill until set.

yum_tea Here's a recipe that is easy, inexpensive, and really tasty.

BEEF AND PEPPER STIR FRY
- 1 lb package of eye of round steaks
- 16 oz package of frozen pepper and onion stir fry mix -OR- 16 oz of fresh bell peppers and onions, diced
- Soy sauce

1) Cut the steaks into strips or cubes and add to pan. Oil is optional; if the steaks are too lean, use 1 tspn extra virgin olive oil to keep the meat from drying out.
2) Add in the peppers and onions. If you're working with fresh veggies, wait until the meat is about 2/3 of the way done before adding the peppers/onions--you don't want them to get too mushy, they should retain some of their crunch. If you're working with frozen veggies, add them in FROZEN when the meat is about 1/2 done.
3) Add in a little soy sauce, just enough to give color to the onions and create a nice aroma.

Serve over rice. Feeds four, or feeds two for two meals.
