Leafeon and Glaceon are tied as my favorite Eeveelution. I just like their designs and cries. Plus, they're each my top two favorite types.
My least favorite is Sylveon. I have a serious stick up my bum about the Fairy type in general.

Jolteon. That ability of his is awesome when fighting Clemont in Pokemon XY.

From the very beginning I've loved Umbreon because of its looks and its well rounded skills in fighting (that's just my opinion, I know its different for everyone). Once Leafeon was introduced, I immediately took a liking to it because of its looks alone, I never really use it to fight because it has too many weaknesses. sad

Based on appearance, I've always loved Jolteon. He's cool and he's useful, not to mention the fastest out of the whole eevee line. I think there might be something in there about it being reminiscent of Sonic, ala super sonic. Yellow, spiky, and very fast.
In terms of in-game usage, my god I love my espeon, Helios. Supports the team like a freakin' boss. Bounces away spikes so that they don't hurt my poor defenseless Sarenrae (my talonflame), puts up walls so that no one bothers Fafna (my dragonite) while she dances. Not to mention how majestic espeon is. All around, it's one classy 'mon.
Love Umbreon as well, but I hate that he can only learn Foul Play through a move tutor. Not nearly as good without that particular move.
Sylveon kinda creeps me out because it grows ribbon-tentacles. Not sure why it needed those.
