One goal of this game is to unlock all the seed variants. Now thanks to the official guide on fogu.com, I am able to come up with a chart of sorts to figure out what to plant when.
Spring year 1 - all you will have available to you in the beginning is Cabbage seeds, luckily cabbage mutates in spring, so what you are going to want to do is save 30 red cabbage as each cabbage becomes ready and clear out as much stuff as you can as the story progresses. Once you have 30 red cabbages, ship them.
Onions should be second to plant as you only need 10 scallions once the onions are ready.
You do get celery seeds, but I would only plant as many as the quest you are given from Jeanne requires for now. You need the celery seeds for winter year 1 because that mutates into white celery in winter and you need only 10 of them.
For each 10 mutations, plant 50 of each crop to be safe. And use fertilizers when you can. Save some fertilizer and compost for Dean as he helps you unlock more seed blend fertilizers which help certain crops later.
If you manage to unlock the mountains in the spring and have shipped the 10 scallions thus unlocking the seeds, then buy some scallion seeds and plant them on the mountain top. Be sure to have the hammer as well.
Year 1 of summer, you are going to want to plant lots of corn on your farm. Not only are you going to need it for animal feed later, but there are a pair of mutations that happen. Save 10 fodder corn and 20 sweet corn if you get those. The only other crop for your farm will be the green pepper. It mutates into orange pepper and you need 20 of those. So be sure to plant 100 green pepper.
For the mountain, just after you exit your farm, there is a planting area, plant wheat there in the summer and collect 10 durum wheat. On the mountain top where you woud have planted the scallions, now you want to plant tomatoes to unlock san marzanos and you need 10 of those to ship.
If you manage to unlock the beach, then plant carrots and pumpkins there in the summer. You need 20 brown carrots and 10 zucchini. Heneroshi managed to unlock the beach this early, but did not quite reach the brown carrot goal. Seeds can carry over into the following season so unless they wilted after planting, keep checking on em until harvest time.
For fall year 1, you want to plant your potatoes anywhere, so I would still get 50 of these, but I would plant 10 on each area. So 10 on the farm, 10 in the mountain area, 10 on the mountain top, and 10 in the swamp. Keep 10 until one set is ready so you can plant 10 more.
You need 20 giant potatoes for the new seed.
On your farm, be sure to plant wheat so you can get 20 barley and be sure to plant broccoli so you can get 10 broccolini.
For the mountain area, you are going to want to plant hot peppers. You need 10 habanero in order to unlock the new seed.
Then for the mountain top, you want to plant fodder corn and only if you unlocked the seed and only if you unlocked fertilizer set 1. You can buy fertilizer types from Carol who is the flower shop lady. She gets new types each time Dean says you unlocked a fertilizer set. Dean's quests can unlock fertilizer sets.
For winter year 1, you are planting lots. You need to plant celery to unlock white celery. You can plant this anywhere and ship 10. Next, you should plant strawberries. You need 10 white berries, but good luck in getting a harvest. You might need berry fertilizer for this. Then you want to plant tomatoes anywhere and save 50 of these because it is unknown how many you actually need, but you will not need anymore than 50. It is the crimsons that you want to ship 50 of. If you have unlocked broccolini, then you should be able to plant these and you have to use the broccoli fertilizer in order to get romanesco. You need 20 of these in order to unlock the seed, which will carry over into year 2.
Below, as you complete each season, tell me your farmer name and what seeds you unlocked. This is for year 1 only.
