Isn't that why most vampires are made when they're young. I mean, aside from an author's preference to have them that way. Why would they turn someone who was of an older set, say around 65 and above? I would think it would be too much of a shock to their system and the changing process would kill them as opposed to change them. That's just my thinking though.
Author preference seems to be the big one. I say to hell with that. There are plenty of reasons to have a vampire who physically looks older:
-Accidents. You would think someone who is going to die anyway would make a good meal for a vampire. But not all of them are careful. A vampire about to get caught might make haste and unintentionally turn the victim.
-Preservation of knowledge. For any age, really, it could be beneficial to turn someone who has a certain kind of knowledge so they can continue to study it and help your side.
-Extension of life. Someone who is desperate for immortal life/not willing to die may resort to this, even if it means tricking the vampire into doing it.
-The vampire simply likes them. Not all vampires are going to be charmed by youth and beauty, and not all are looking for eternal love or stupid things like that. Some may either want someone their own physical/mental age, or maybe the vampire sees something beyond their physical age that they wish to have for their own.
-Population. Depending on the story, the vampire may not be too picky about the age of the victims if the point is merely to increase their numbers.
-Deception. You have two people in your vampire group. You come across a hunter. Is he more likely to go for the younger, stronger-looking one, or the one that appears to be frail and weak? Exactly. Children also work nicely for this, as King has proven in Salem's Lot.
Thinking outside the box a little does wonders sometimes. I have personally used the first and last ones in one of my stories.
