RICE BALLS
1 lb. cooked rice, do NOT use instant
4 eggs
1 lb. diced Mozzarella cheese
1/2 c. Parmesan cheese
1 stick melted butter
2 tbsp. parsley
1 tbsp. oregano
1/2 lb. finely chopped salami
Bread crumbs
Mix all ingredients well. Form into balls about the size of golf balls. Roll in bread crumbs and deep fry until golden brown
