Dissonance is the art of going out of key on purpose in order to make me angry. You'll hear it most often in huge bands and Symphonic Power metal/Power metal.
Dissonance can turn a great song into a teeth-gritting one, complete with building hope of a good sound and then a crushing of the self-same hope as the music and the singing clash together so hard you bite your own gums.
If anyone knows of any 'epic' music, give me a holler because, strictly speaking, it is the most entertaining music in the universe and I can't get enough of it.
I've actually taken to listening to mediocre music just to get a fix of epic-ness. The best stuff, so far, has been Symphonic Power metal, because they'll have a guitar blaring, and over that, a blooming FLUTE will play.
If that isn't epic, then I'm an idiot, because it seems like the most incredibly fabulous thing ever to be invented.
Currently, I'm listening to a song called "Beyond the Fire," which sounds cool enough by simply the name. You can hear a fine example of Dissonance during the chorus. You'll know it when you hear it, because you'll suddenly feel as though you're biting a fork. Now, the song is actually pretty good, and has beautiful music, but what is the point of going out of key? It's NOT epic! It's lame!
Truly epic music should be harmonious and energetic.
It wouldn't be so bad if only some of the bands did it, but almost-- no, every single one I've listened to, as of yet, has gone out of key for the sake of what they believe must sound good. Argh!
The only band I have heard that does it truly right is Dragonforce.
I'd like to take this moment so say that anyone who bashes Dragonforce but likes fantasy music is a moron and probably a hypocrite, too.
Wait, I got that backwards-- strike that; reverse it.
So, yeah; I really need more music. I don't think rock, any form of rock, is good enough for me, any more. It's not ENOUGH.
Someone give me something.

In the way of metal metal, the CD Ice Upon the Night by Immortal Souls is good, too.
